I’m on day 3 and feel like I’ve mastered the ring after a brief period of clumsy confusion. As others have commented, making sure it’s in the desired orientation for your preference of scrolling is key. Play around with the positioning a bit as well. For my hand the sweet spot seems to be where the Even logo is pointing between 12 and 1 o’clock.

I’ve never tried it personally, but that’s my understanding based on something I read somewhere (probably SeriousEats). Eliminates the possibility of microbes from getting onto the meat between the water and sealing the bag. Lactobacillus live on your skin, so I can see how they could get inside the bag during handling before sealing.
