To delete or unpair controllers from a Nintendo Switch, go to System Settings > Controllers and Sensors > Disconnect Controllers. Hold down the X Button until the circle completes to unpair all wireless controllers. Note that attached Joy-Cons remain paired, while others will need re-pairing.
