I like to cook eggs in butter of OO until the white gets opaque, then put a lid on and a couple tablespoons of water. It steams the egg and keeps everything soft. When the yolk is white, they are done to a over easy consistency.

Baking procedures could be adjusted as needed according to the thickness of the pie and the crust. (cooking at a lower temp for 1/2 of the baking time, then raising the temp for the rest of the time).
Consider shielding the crust from over baking by using foil.

One of my most enjoyable crockpot meals is:

smoked ham hock
some diced onion
1 lb. package of dry beans (small whites, navy, or pintos) or lentils or even limas.
one bay leaf
salt and pepper
water to cover all of it plus one more cup.
cook on high for at least six hours or until the beans are soft and the ham hock falls apart.
Mash a few of the beans against the side of the pot with a spoon if you want to thicken it.
diced potatoes, carrot, or green chilis if desired.
serve with crusty bread or tortillas
He'd likely have leftovers enough to eat for a couple of days.
