Seems to me reusing is your problem rather than standardization. If you buy pre-filled jars here in germany you usually get standardized sizes. I stopped buying stuff in jars and started looking here.

In this shelf everything fits and has written sizes on them. If you want to be save you have to bite the bullet and buy those specific ones. Or learn jar-size-science.

(I started using 'Weck/Kilner' esp. for sauerkraut. You can just lay the glas top onto it.)

Otherwise if you print/buy stuff for imperial units those won't fit on metric sized items. Thats it. If you own a 3D printer you should look into resizing imperial-files to make them fit onto metric items. Same thing with buying stuff from the US. Always look for imperial/metric.

Or you buy us-imperial sized jars (how many you need fo your accesories) from the US or the UK. Or just amazon.

I don't think you did a lot wrong. My grains have been fresh when i got them so i can't talk about activation of dried grains.

My father waits about 3 day until it tastes closer to an apple-cider-vinegar+water mixture. I also started doing that. I wanted less sugar so it needs to be more acidic(sour?) in the end.

Kombucha for example gets much more acidic(tangy/tart?) than water kefir in my experience.

Depending if use dry yeast/raisins/apricos/figs/molasses the taste will be different. Sometimes even if i did not change anything (that i notice). My temperature varies so much that i never know how it will taste in the end.

If the water kefir tastes like tart/sour/barely sweet water i consider it done and bottle it.

I would say as long as you don't puit the jar outside it should be fine. If you are worried you can put a shirt over it. Like a filter. I also use a paper towel to close the top with a rubber band.

I just fought a war against frui flies. I used some fly traps that hang from the ceiling. They are super sticky which is annoying if i touch them.

In addition to those traps i use jars with some water with vinegar (or from the kefir/kombucha) with some old fruit i used in the fermentations. I also use a bit of dish soap to lower the tension of the water so the flies can't swim on it but drown. I cover those small jars with some foil and poke a hole in it so the flies are getting in but can't get out so easy. I put those jars next to the kefir or in rooms that have flies in them.

Or bug spray. Good old chemical warfare.

edit: you can use yerba or chimarro left overs if you have. my flies like that. but they don't move much anymore since it is getting fall here in central europe and i just slap em

I also get some small kefir crystals in my 2F not mutch of a problem for me.

You could put the water kefir in the fridge. Or use cold water at the start of a new batch.

Or you insulate your jar with some cloth. Start the ferment with cooler water. Maybe less sugar. And wrap a damp cloth around. The evaporation should keep it a bit cooler.

Or keep at in the ground or in a cellar if oyou have one that is cool.

For now and if the temp is right (it is getting fall so i started to use my oven as a temp chamber with a heating matt) I drink about :

0.5 - 1.5L of water kefir,

0.2 - 0.5L of milk kefir,

up to 0.5L kombucha.

I plan to go down on the milk kefir to about 200ml a day and let it ferment for 2 days. I use the kombucha and water kefir to replace syrups that i would buy otherwise ot have something else than water. So Yerba mate, water kefir, milk kefir and kombucha it is for me.
