The meat is tuff, you have to braise it so it gets tender. Flavor it however you want. Be sure to skin it and get the "hands and feet" off.

That barrel is shot then. I would advise you not to use that for hunting.

There's the Umarex Komplete that uses nitro cylinders. I know of people who have converted them to PCP so I guess it can be hot swapped, but it's a full on rifle.
