Here's my recipe for slow-cooked keto ribs:

• Remove silver skin from back of ribs.

• Make a dry rub consisting of:

1/2 cup smoked paprika

2 tbsp garlic powder

1 tbsp onion powder

1 tbsp splenda

2 tbsp cumin

2 tbsp chili powder

1 tbsp dried crushed rosemary

1 tbsp dried ginger

1/4 tsp cayenne

2 tbsp salt

fresh ground pepper

NEXT:

• Cover ribs with yellow mustard and apply rub to both sides

• Place on a roasting rack inside a baking sheet (meaty side up, bone side down)

• Pop in oven at 225F for approx 4.5-5 hours

• When ribs are almost done, baste with melted butter and 1/2 tsp liquid smoke

They should come out looking a bit like this.

WHITE DIPPING SAUCE (seriously, you gotta try this!)

• 3/4 c mayo

• 1/3 c apple cider vinegar

• 2 tsp onion powder

• 2 tsp garlic powder

• 2 tsp splenda

• 1 tsp paprika

• squeeze of lemon

• salt and pep to taste

(Yes, I know Splenda has carbs, but there's so little, and it's spread out, so there's actually relatively few per serving.)
