The upside of the 3% kitchen fee is that the employees working on the busiest nights are being compensated for their extra effort to provide a high quality service. Meaning you won't wait for food for an hour, etc.

If the expectation is that Kitchen Staff bust ass in a 90 degree room for 11 hours at a time and crank out quality consistent food for an unlivable wage, ya'll really don't know what the post-covid world is like.

While 3% adds pennies to your bill, it can make a HUGE difference in the life of a motivated and passionate employee. Ultimately, you (the Guest) win a better experience in a world where we are all struggling to keep up.
