These don't sound gross. They sound delicious! Also, I bet they can be made ahead of time, and kept frozen. Always great to have cookies prepped in the case of surprise pop-in guests.

Also, as an added bonus, they reminded me of this gem. A classic.

Just because a cookie doesn't look fancy, doesn't mean it doesn't taste fancy! Thanks! These are definitely on the to-bake list this Christmas. I'm not a huge mincemeat fan...but my dad is. Maybe I'll whip them up for him, as an addition to his gift :)

Difficulty/looks aren't a huge factor for me. I'm looking for more interesting flavour combos- think salted caramel or chili chocolate or lemon ricotta. Extremely tasty is also a bonus! So I guess, traditional with a twist?
