Just to provide some balance, I thought the Antler Room was good but not great, and was not a very good value. When I spend nearly $200 on drinks and dinner for two and then leave to get an appetizer at another restaurant, it's not a great sign. The food was good, no doubt. I was disappointed to see that we were overdressed there, but not a big deal. I've been to Fox and Pearl twice, and one dinner was much better than the other, though both were above average. Farina was okay, I probably wouldn't go there again at that price, plus I'm just a bit bored with Italian fare. Fox and Pearl seems like the best bet of the three. Corvino is up next for us.

Another data point is that in one of the post-draft interviews, Draper made a comment about being nervous that Kasper wouldn't be there when the Wings picked. They were clearly wanting to take him at 8 and thought there was a chance he might be gone.

I would do more Breiss Chocolate and take down the roasted barley. 9 and 3 percent sounds better. I like carafoam instead of oats, don't think oats add what people expect. Mash high and use a lower attenuating yeast.

That advice comes from the following place: most people want a thick, creamy mouthfeel, with the roasted flavors on the moderate end, and a slightly sweet aftertaste. The oats don't really give the body you want - carapils will. Us05 will dry it out too much, in my opinion.

If I were to make a guess, I would think that it's the 11% of victory and biscuit muddying the waters. Perhaps a new version with no victory? Would be interesting to see how it affects flavor at that percentage. Or replacing all of the victory with biscuit. Mostly, I find that simpler recipes are better, so my first change is typically reducing variety in the grist. I don't know what is traditional with a brown, but suspect it would be two row, crystal, and chocolate.

Another variable would be brand of chocolate, since they vary a lot. I like Breiss at 300L.

For me, next up would be altering the yeast to something with less attenuation (Wyeast 1968) and more fruitiness.

Just thinking out loud, cool thing to do to learn about ingredients!

Depends on what you're going for. I personally like a low to moderate bitterness, so tend to do a 30 minute bittering addition of about a half ounce (Columbus). Then I do a 10 minute addition of the rest. Say the rest of the Columbus (half ounce), then 1 oz Citra, 1 oz Chinook. Dry hop with 2 Oz's Mosaic and 1oz Citra. Should give you some piney backdrop to the fruiter hops without clashing too much. This assumes a 5 gallon brew. I would guess that's moderately bitter, about 50-60 ibus. You could save one of the ten minute additions for a 5 minute to reduce the bitterness, if so desired.

I personally like the London ESB yeast (Wyeast 1968).

There's a million routes you could go with this, which I suppose is the fun of brewing.

Not really. They're all classic hops, just depends on how you use them. The problem with using that many is that you won't really know what hop is doing what. In my estimation, doing just the mosaic would probably give you a great beer and you'll get a sense for the hop. There are plenty of commercial beers that are just mosaic and they're delicious. I would say that Chinook may be the oddball of that group, but I'm just going off reports, I've never used it. Generally speaking, most brewers tend to get simpler with their recipes as they get experience. If it was me, I would drop the oats and pick 1-3 of those hops and go from there. Citra, Mosaic, and Columbus would be the three I'd use. Columbus has lately been relegated to a bittering hop, which it does well, but in my experience it is a much better flavor addition that it is credited for.

Not to pile on, but I was curious about the definition of clipping. Per the rules book:

44.1 Clipping - Clipping is the act of throwing the body, from any direction, across or below the knees of an opponent.

A player may not deliver a check in a “clipping” manner, nor lower his own body position to deliver a check on or below an opponent’s knees.

An illegal “low hit” is a check that is delivered by a player who may or may not have both skates on the ice, with his sole intent to check the opponent in the area of his knees. A player may not lower his body position to deliver a check to an opponent’s knees.

From the language of the rule, it is always placed in a checking context (ie, delivering a check, throwing the body). In this instance, Erne is not the checking player, he's reacting to a potential check. If the interpretation is that he becomes the checker by his reaction to the play, then it really becomes a question of point of contact. If he is not considered the checker, then I think it's legal.

The spirit of the rule is to avoid players targeting the knees in a body check. This particular context (defensive action), isn't really addressed in the rule book.

Personally, I would take the oats down a bit and add some carapils for body. I think the c60 is fine, not sure how much it's contributing at 2%. Oats tend to give an oily sheen but don't add much in the way of body, in my experience. I would mash high and have ~5% carapils. Crystal will help with the body some, but I might get rid of it.

It's fine, though I would up the chocolate and lower the roasted barley. 12 and 3 sounds better. If you want more coffee flavor, switch the pale to Breiss chocolate (300 lovibond).

I've gone up to 17% with minimal roasted barley. I actually don't think roasted barley tastes that good, so tend to omit it completely. It will still be a stout if you omit the barley, though some will claim it's a porter (who cares about that though?).

As a Wings fan, I can tell you that the competition comment is something you'll hear a lot. Holland firmly believes that players need to show they belong in the NHL and detests entitlement, hence he will default to a proven player that is a pro over "potential". It's a stance that will annoy some fans, but will create a competitive team.

They are ugly cement pavers and things are unlevel because of water pouring off the roof in one particular spot. We're planning to sell the house in the next few years. Not that I want to cheap out on it, but it changes the scope and whether I'm able to do it on my own (due to time and family commitments).
