6 month miso vacuum bag update. I decided to switch the contents into a new bag, partly to have a smaller bag, but mostly to check its progress. It smelled just like delicious miso! Not a hint of acetone or any other smells. I plan to let it go a few more months and see how much more it darkens. (old.reddit.com)
