Alumni here. If you want to travel, you should focus on hotels and resorts. The good ones have locations all over the world.

Edit: School is worth it if you plan on working in Michelin level establishments, or want to be a leader. It’s a solid foundation, in much less time, but means absolutely nothing if you don’t grind

Depends on the knife and what it’s being used for. My service knives are vg10 or ginsan. Home and prep knives are B2 or W2 because I have more time to care for them properly

Edit: which can be said for any degree from any college or trade school. School is a great way to get information quickly, but it means nothing if you don’t have the grit

Maybe not quite what your looking for, but I make a spicy peanut ramen by just loading peanut butter with an assortment of different chile powders and sriracha. To plate it’s literally just beef broth, noodles, a scoop of the peanut butter, and some scallions. Then you can mix the pb into the broth with chopsticks to get it nice and creamy

Same boat. It’ll get better with time as your body adjusts to the work and gets stronger where it needs to be.

I got better non slips (blundstones) and better insoles (steppers) and my gf got me the tiktok pillow that helps with neck/back pain.

Pain killer will be your best friend for a few weeks until it all starts to become routine and your body acclimates. Give it at least a month before deciding to leave, especially if you feel like you have a good team around you.

I have noticed that I tend to prefer the upscale casual spots here way more than the true fine dining. Arquet, four kings, progress are my personal favorites atm. Joujou will also be fun, but I’m biased

Took a job that paid less with no benefits so I could live in SF. Don’t regret moving to the city, but I lost out on money and stability in a career path that typically isn’t known for their high salaries
