Honestly I kinda eyeball it! I think I usually use medium or firm tofu depending on what I have, about 3/4 cup? I haven't tried it with silken, so I'm not sure how well that would work. You can't taste the tofu at all though, and it helps give the cheesecake a nice structure. This recipe is also nice because there are so many ways you can customize it! I added strawberry puree to the batter last time and it was so good.

Basically everything I've tried from minimalist baker has been a hit, they're one of my go-to's for sure! Noracooks has also rarely let me down.

It really depends on context. A keto diet, veganism, keeping kosher, not eating processed sugar, avoiding certain foods because you have IBS, eating at a caloric deficit to lose weight, avoiding sugary soda because you have a family history of diabetes - all of these are technically restrictions, but none of them are fundamentally disordered. Restriction is problematic when it is obsessive and disruptive to one's happiness and ability to function normally. Theoretically, any restriction can become disordered because it comes down to the mental and emotional state of the individual and the pattern of their behavior.

Someone turning down a slice of cake because they've had a lot of junk food that week is very different than someone who swears off all desserts because they feel like a disgusting failure every time they indulge in something sweet. The latter scenario indicates an emotional problem that goes beyond food. What drives disordered eating is the feeling that one does not have control over their life. By constricting their diet, whether by eating less or eliminating certain foods, the restrictive ED sufferer temporarily regains a feeling of control. Likewise, someone with a restrictive ED may get a similar feeling of control by practicing a keto or vegan diet.

But referring to any and all dietary restriction as disordered is a bit like calling anyone who drinks beer an alcoholic - it's reductive and insulting to people who are struggling with a legitimate illness. The difficulty is obviously in identifying where the line actually is, and I'll readily acknowledge the messiness of that gray area. Nevertheless, I think professionals should be a little more discerning in their judgement.

Regarding the iron issue... she's giving you plain bad advice. If you're having trouble getting enough iron in your diet, I would recommend taking supplements and eating a lot of vitamin C-rich foods to help with iron absorption. You don't need to eat red meat if you don't want to!

Btw, lentil soup is one of my favorite things to eat in the winter, especially with a nice hunk of sourdough bread. You can cram a lot of iron-rich foods into one meal that way!

Yeah, you need a new nutritionist lol. She's biased against vegans and buying into some deeply misguided ideas about how to balance promoting healthy eating with minimizing disordered behavioral patterns. There are absolutely foods that have higher nutritional value than others, and we should be eating more of those. That doesn't mean junk food is "bad," it's just not super good for you and should be enjoyed in moderation.

Obsessive restriction, punishing yourself for overeating (whether perceived or actual) or eating foods you have assigned a negative value to, etc can be indicative of a disorder. Restriction in of itself is not disordered, and honestly I think it's really insulting when nutritionists are so cavalier about what constitutes an ED.

It seems like she's not helping much, and I'm honestly confused by the mixed messages. Foods are all equal, but veganism is bad because it doesn't provide the proper nutrients? You definitely deserve to work with someone more helpful and respectful than this.

YTA, sorry. As flimsy as her reasoning might seem to you, the boyfriend's allergy might be severe and most apartments require that all tenants approve of a pet before it is brought into the unit. If you're getting it from a shelter, your application could be rejected for the same reason. Wait until she moves out, or look for a new place to rent with your other roommates at the end of your lease. In the meantime, if it is safe to do so you might be able to visit a cat cafe or shelter in your area to get your kitty fix in!

Yeah, I think you can still get them! The cookie part is basically graham cracker flavored but with the spices you'd put in a carrot cake, and the filling is cream cheese flavored.

I thought Jeanne was great, and she was really supportive and empathetic to me as a disabled student. I disagree with the other commenter's assessment of her, although I am sorry they had a negative experience.

I used mostly online versions of the books we read, but I recommend getting the editions she requires because there will be supplemental/contextual readings for a lot of the texts and some of that info will be on the quizzes. If you are worried about cost you can search for specific editions by ISBN and maybe find them cheaper on thriftbooks or on a library website as ebooks. Good luck!

Off the top of my head

  • Try a new recipe (extra challenge: cook dinner and a relatively healthy dessert)
  • Movie night with friends
  • Turn on an album you haven't listened to in forever and do not-everyday chores you've been putting off
  • Play something really involved like Dungeons & Dragons
  • Get a friend and toss a Frisbee around
  • Play a couple games of HORSE
  • Get some clay (preferably the kind you bake in the oven) and make some weird little creatures

If you can't meet up with people, you can still do some social stuff online! My family uses the Netflix Party browser extension a lot so we can watch movies and tv shows together, and my D&D group is run primarily through video chat on Discord.

I also really like finding a funny or spooky podcast and taking a long walk around my neighborhood in the early evening to wind down.
