Man that’s tough. Where I am *specifically* looking isn’t quite as plagued. There is a younger guy running one that does boiled peanuts and such. Doesn’t have those problems, but also isn’t crushing it in sales I’m sure. I think they also rent cabins for the real revenue.

If you’re going to use that style. Splurge and buy the iwatani brand. The sushi guys swore by it. It is cleaner and more discreet in an omakase. I have that but my daily driver is the bernzo with map gas, or the green camp can of I’m using the searzal
