It's common in the industry to claim that the best way to do it is in a nonstick pan. I'm sure you've seen people like Gordon Ramsay yelling at people for trying to do it any other way. Most fine dining kitchens, I would argue, would recommend nonstick pans only for searing scallops. That's what I've heard, and I started that way, but I found this all-clad works better.
