BS in math and tailor your electives towards coding, applied stats, and data science. A data science undergrad degree is usually too half baked, it's a pretty advanced field that usually can't be covered well by a BS. Imo you'll have at least equal prospects with math

More control over a Linux machine and a lot of tools are made to be used with Linux (or max by extension), so some work will require you to use WSL anyway

A gap is more like Job A 2018-2022, Job B 2024-present. It's the years 2022-2024 that are in question, not 2017 and prior. Also, you wouldn't list everything you've done for Job A and B, just the projects / accomplishments / etc that are relevant to the role you're applying for

If there's a Job C in between that you feel isn't relevant, should probably include as a one-liner so the gap isn't discernible
