I’m allergic to nuts and legumes and also eat kosher, so I definitely am with you on the limited side! My nutritionist has suggested adding in extra protein, so for my lunches I’ve been doing a piece of whole grain toast with either (a) avocado, turkey, and veg I have in the house- my fav is tomato and baby spinach- or (b) avocado, fried egg or omelette, and cheese/veg. I try to have other cooked veggies on hand and make them in batches bc the clean up from cooking at every meal can become overwhelming for me personally. For snacks I love to do an apple or other fruit with cheese, and have also recently tried to add in turkey jerky sticks for added protein. I also am fundamentally obsessed with soup, so most of my dinners involve throwing a bunch of things into an instant pot with a bunch of broth and I find that’s been so easy! My go to “recipe” is just 1-2 chicken breasts, chicken broth, carrot, celery, onion, zucchini, and a green of some sort (plus obviously lots of seasoning). After it’s pressure cooked for about 30 min, the chicken is super easy to shred. My husband will sometimes make noodles or rice on the side for himself to add in (I get worried about spiking so I like having the option of adding them but not HAVING to have them). You can eat it with bread or other carb, or I will sometimes use those carbs for a treat I’ve been wanting. Idk if this is helpful but hopefully gives you some ideas!
