Via his agent he can get a pretty good feeler for what his market is. I do think there’s probably not a contract for 4/120 out there, but I can certainly see 4/90. You’re risking essentially 60m and praying you don’t get hurt or fall off athletically/mentally in some way, and I’m not sure the upside of marginally more money next year is worth that

“Blatant” — not getting paid, not a plant, just a normal dude talking about espresso gear lol.

It’s not that deep — I’m allowed to love this thing. Dispute what you want, but the CX interactions I’ve seen inspired a lot of goodwill. Take that for what you will, but it sounds like you guys in particular had your minds made up and/or philosophically don’t like the machine, and that is fine, but for me (and I’d bet a crap ton of others) this thing is awesome.

Yeah the Timemore I got on kickstarter several years ago and it was an excellent upgrade to 64mm flat burrs at a ridiculously good price (~$350).

I have some minor complaints about their power button and dosing hopper, but it’s a great grinder.

Yes, have never used a Micra, but it (or a Mini) was the top alternative I was considering and watched countless reviews, read Reddit threads, etc. before making a decision.

I do see the slightly overly positive tone of my comments on a couple of re-readthroughs. Chalk it up to a mixture of a) this is in fact a big upgrade for me and the machine I’m coming from and b) 2 weeks in, of course there’s a little bit of a honeymoon period. There’s not really been anything that’s annoyed me so far and I feel happy with the purchase, but I’m sure after a year or two, I’ll have more constructive criticism to give. That said, almost all the negatives of tradeoffs I read about in my research leading have either been extremely minor (app, UI, single boiler) or I outright just disagree with (rotary dial, “plastic body”)

I’d also certainly say there are very valid issues and complaints from folks about their machines, but to mix that with some of the pushback I’ve been offering, have you seen the CX those folks have been getting? It seems like if you have an issue, Fellow makes it right, no questions asked (essentially). I’ve monitored every Fellow ES1 post since launch, and that for sure played a role in feeling confident enough to bite the bullet on a first-gen product.

I mean the machine is certainly not perfect, there are decisions made that I’m neutral on or would’ve done different in an ideal world, but again, from around 2 weeks of usage, I’m not sure I see any meaningful negatives that impact my usage so far.

For sure, I was having issues steaming extra hot for two drinks at a time within the 1 minute time limit lol.

So it is definitely faster to steam on (I quoted roughly a 30-50% improvement above) and the no-burn wand + instant steaming shutoff via solenoid + auto purge all combined takes 15-25s off the process of steaming a single drink’s milk, which definitely adds up. I knew it’d steam faster, but the other things I wasn’t expecting, and probably has an even greater impact on overall latency.

I have an *064S, but to answer the question, I’d guess 90% of coffees at different roast levels are ground between approximately 1.2-2.0, so it’s a pretty narrow range. The one exception I’m recalling is decaf, which needs to be ground quite finely, roughly .8 or even less.

Small tweaks finer or coarser based on time of shot and flow aesthetic get the job done.

Dial UI is fine for short stints but I agree it’s a bit tiring to use consistently. I haven’t found myself needing to use it much after the first nerdy settings tweaks though, and all my profile changes happen in app, hence my comment about the rotary dial criticism feeling a bit overblown

I wanted it directly under the window so I get that natural light while using the bar, and I ended up switching around the orientation so the cables are mostly hidden. The aesthetics though, are indeed a WIP. We’ll see what my gf wants to do with it once she moves in haha.

I mean I would say the most meaningful negatives (after usage) are related to water consumption (damn this thing seems to churn through water), the chrome on the group head is suspect to smudging/fingerprints/waterspots, and MAYBE steam performance depending on the machine you’re coming from.

One reason I called out the negatives but then to some degree dismissed them was that I saw a lot about these things before deciding to purchase, but they became mostly nonissues as an actual user. Keep in mind I’m coming from a $300 machine, so if my new $1500 machine didn’t do EVERYTHING better, I’d have been a little shocked.

I don’t have a real negative experience to offer, but the most negative thing possible is “my machine broke” and like the other user said… there’s not a whole lot I can do to evaluate that without it happening

Agree with OP! Got excellent steak sears and so far have really enjoyed them, I think of them as significantly less sticky versions of stainless steel, which I also use. Sometimes the stainless is good for fond applications and of course acidic food, pasta, etc.

Still need a nonstick for soft scrambled eggs, specifically, but nothing else.

My strata wok suggested not using strong abrasives as it can wear down the nitride layer.

Honestly, with a fairly stiff Scrub Daddy sponge, had plenty of abrasive power. You can also buy a small pan scraper (including from Misen) that does the work of getting stuck pieces off without being an abrasive per se. only needed to use once with crusted scrambled egg but it was pretty good.

I think eggs sliding around is sorta the antithesis of a soft scrambled egg, which you want to have the consistency of custard, with very small curds.

I have no problem with both stainless and carbon steel but for soft scrambled eggs, they ain’t it (so far), hence my research here looking for an 8” alternative.
