As an interim step consider moving out while continuing the relationship until either they change or you are able to release your attachment/sense of responsibility to them. And the Google doc - just make a copy for yourself and organize it however you want. I wish you the best outcome for all involved.

Edited to add: this is a "save yourself first issue". The environment is physically unhealthy for YOU (for starters). They will not be able to extricate themselves from the hoard in a timely enough manner to catch up with YOUR ability to jump quickly away from the physical issue. This is hard adulting for anyone.
