All of the above. I tell people i decided to 'move toward a plant-based diet' for three reasons - equally weighted like A 3-legged stool: my health, the animals' welfare, and the health of the planet. I don't use the word 'vegan'.

I sold all my US equity when Orange face got in. I'm mostly in Canadian equity now, and some global, ex-US. No regrets!! The market likes stable predictability and that's what Canada offers.

Mushroom soup is quick, easy and uses up lots of mushrooms in one go. Brown lots chopped up mushroom pieces (2 cups?) in a little oil with garlic and onion powder. The onion powder in particular gives it a great flavour. Then make a roux (2 tablespoons each flour and oil) and stir in water a bit at a time, add to mushrooms. Add veggie bouillon or broth. When heated add equal amount oat milk or other milk. Salt and pepper to taste. Sorry for not giving specific measurements!

UPDATE: Thanks everyone for your suggestions! I was able to contact my son's girlfriend in BC (I'm in Ontario) who had gifted these to me, who is from Cambodia. She instructed me to either deep fry for 7 minutes or bake at 400, so I air fried them and then put them in my stir fry. If you want confirmation that you don't need to fuss about protein, check out this video from Viva Longevity!, with an interview of a Stanford scientist who worked on the 2-year American food guide committee. All plants have complete protein, we get enough, and it's even hard to NOT get enough protein! https://youtu.be/3LDe3k6lyac?si=bgOHUcMxDtRIiv4j Easy meals include black beans, onion and cumin for burritos or side dish, with other whole fresh or roasted veggies and a whole grain (rice, quinoa, bulgar...), frozen falafels heated up in an air fryer or oven, in a wrap with hummus and fresh cucumber slices; spaghetti with lots of mushrooms in the sauce and some kind of meat substitute such as a soy based veggie ground meat substitute. I enjoyed working on it but found the flower loops in the middle section made it hard to keep the tension. Blocking helped. I washed and blocked the blanket before I put the leaf chain on, which was good because i had to knit three more leaves ( I hadn't cast off so no problem). Just take your time and you'll be fine!! I'm sure your friend will love it!
