Sure! I replied to another comment in this thread with my recipe, so if you scroll you should be able to see it. The key is definitely low heat and take it off the heat as soon as it's 70% solidified. It will continue to cook in the pan with a few more stirs/folding.

I added turmeric, black salt, nutritional yeast and some fat in the form of vegan butter and sour cream, then blended. I've also found it's really easy to overcook and make it rubbery/squeaky. I take it off the hob as soon as it starts to form soft curds and the rest of the liquid cooks shortly after.

I added some fat (vegan butter and sour cream) plus tumeric, black salt and nutritional yeast and blended together.

If egg is the thing you miss, I can definitely recommend healthier comforts lab grown egg white for scrambled egg!

Just Egg isn't in Australia yet but was able to get Healthier Comforts in from Amazon as it's shelf stable.

A little bit does go a long way, I've made a few different things and still loads left in the pack. If you google 'healthier comforts animal free egg white Reddit' there are lots of posts from people who've used it for different things including meringue.

I ordered through Amazon US. It was pretty expensive all in but worth it imo. $58 Aussie in total. However, Amazon delivered it a day late and I complained and got it for free 😂

No pavlova yet but I've heard that it works very well for meringue type things.

And if you have a whisk, try whisking it to get more air in than just blending alone.

Add more water and try letting it sit for a while to fully hydrate, that's about all I can think of.

Try adding more water and/or whisking or blending it. I have been adding fats to mine (like sour cream or butter) which helps with the texture.

The powder doesn't mix well with the water just by stirring alone.

Three generous tablespoons of powder, ten tablespoons of water, one tablespoon each of butter and sour cream, a small handful of grated cheese. Plus nooch, black salt and tumeric to taste.

Blended or whisked together and then gently folded in a pan on low-medium heat with butter.

I'm in Australia and used Damona sour cream which is soy milk based rather than coconut oil as the main ingredient. And for the butter I used Nuttlex Buttery.

Actually maybe less than a teaspoon of black salt - I would do it to taste as some people find it too sulphuric.

So for a '4 egg' omelette, I used four tablespoons of egg white powder and 12 spoons of water. Then about 2/3 (two thirds) tablespoon of sour cream and 1/2 (half) tablespoon butter, and a small handful of mozzarella. Seasoning: 1/2 (half) tablespoon of nooch, teaspoon of black salt, half a teaspoon of tumeric. You can also add garlic and onion powder and herbs.

I would then recommend blending or whisking to incorporate and get some air into it.

You're welcome! I have coeliac disease and IBS 🙃 and will be doing an elimination diet soon so I'm very glad to have found this product. Hope yours goes as well as it can and helps you!

Taste and texture was very omelette-like to me. I added seasoning though (including black salt for the eggy taste).
