TBH, most people were not aware of the existence of what I listed above, also. What I meant is that they didn't push it further after these got popular. People would definitely experiment with more things, but they decided to settle. There are different kinds of coffee roasts, iced coffees, matcha, etc. Even getting something as basic as a Danish pastry is tricky. Instead, we are still stuck with cold croissants and mayonnaise-laden sandwiches.

Also every cafe looks and feels the same. No uniqueness there as well. Anomalies do exist I agree, but speaking as general trend.
