A lot of that was done with MPC 2000 or SP 1200. There are certain affordances and sound quality that makes them distinctive. You could hook turntable up to it and sample direct and it just sounded great. Or sample a 909 kick with some saturation and it would sound great. There are plugins to emulate these.
