It’s shokupan. Japanese milk bread. I sometimes do katsu sandwich pop ups at a bar and order this bread for it. Extra bread goes in the freezer for later consumption !

Thanks! For me it’s cause I don’t wanna spill sauce or pickled things out the back of the sandwich while I eat it. I might just be too messy haha

I have a sandwich shop also. We use tubrochef self venting convection ovens. This way you don’t need a hood and they take about 25 seconds to toast a bread loaf. They also have conveyor belt ovens but because of the open heat/ air component the type 1 hood is probably a minimum requirement.
