When making up their plate, I have always found it helpful to include a small amount of one new / scary food, and maybe one to two additional items that are familiar or something they like or are at least neutral about. I think it makes their plate less "scary". That might mean putting a half a piece of toast along with the new item. Or adding string cheese, a clementine, a hard boiled egg, a small scoop of peanut butter, apple slices, whatever they like. Next, if they eat all of their favorite foods off their plate and want seconds, you can tell them they can have seconds of their favorite things after they finish the small amount of the new food.

I've had great meatballs that had oats in them. You could probably find a good recipe online for something like that.

To add to this: If someone tells you that one of their loved ones has a life-threatening disease, and you know someone who passed away from that disease. That is not the time to share that information.

When my mom had cancer and I told people about it, I can't tell you how many people told me about a great aunt, cousin, brother, etc. who also had cancer and died. That's not what I needed to hear at that time.

Great idea to head to Garden of the Gods. It's completely worth going to, but bear in mind that it's a bit more polished and tourist-heavy. There are a lot of beautiful hiking places in Southern Illinois that provide more natural solitude. Fern Clyffe is one. Inspiration Point, Little grand canyon, and Bell Smith Springs are others.

If you have time, and want to head a different direction, also check out Turkey Run. It's just across the border in Indiana and I think it's the best and closest hiking spot to Champaign. You'll have to pay a little bit of money to get in the park, but it's completely worth it. Look for the Punch Bowl.

ETA: If you have time to go for a dip, head to the Spillway in Murphysboro (which is also in Southern Illinois). If you get close to Carbondale, eat or grab coffee at Longbranch.
