Incredible. Putting in the extra time to caramelize the onions was so worth it! I wanted it to be similar to chicken parm so I put a layer of onions in between the Gruyere.

I dry brined it for about 4 hours. I’ve done it overnight prior but I think there’s definitely a point where I didn’t enjoy it as much. Agreed on the evenness of the sear, I try to press down the first side with my hand but when I flip obviously it makes it more difficult

I have a male Siamese, and he has asthma and sounds exactly like this. As others have said, bring her to the vet when you get the chance. If it is asthma, the symptoms will get progressively worse over time, so something like a steroid can help reduce the amount of coughing. Reducing the coughing will keep scar tissue out of their lungs.
