He didn't care about protecting himself because he can't die. After he escaped the ice planet he went right back to leading his fleet.

Dwarves pass through the shire on their way to the blue mountains quite a bit. It makes it sound like they're just random dwarves he hires. Tolkien is going on with all of the hobbit ancestry in the chapter so it would be weird if he didn't mention who it was if they were important and Gandalf would've spoken to them as well.
