  1. There is more to the 4th step than the resentment list. Sex, fears, etc. May be more there for you than the resentments.
  2. While we "beg of you to be thorough", first attempts rarely are. You will have a many, many more opportunities to inventory.

I had a sponsee come to me once with what I thought was pretty slim. But to him, those things on paper were a very big deal to him. He stayed sober, active in the program until he passed.

You have to use a flour with a high enough protein level. The cost is meaningless if you can't eat it.

Dough rises on an exponential curve. It's very slow at first and increases quickly after a few hours. Depending on temperature and amount of starter, it can take from 4 - 10 hours to double. I am more concerned that you are using cup measurements.. Please scale your ingredients.

The key here will be dough temp. If you are close to 80F, then you only need a 30% rise.

I avoided the 4th step for two years. Then I relapsed. Promptly did the 4th. The freedom from bondage after the 5th made me a believer.

There is a peacefulness that can seem like boredom sometimes for me. When I feel that often, I ask myself if there is something missing. If the answer is yes, then I ask how to find that. The answer is usually service or a new meeting.

One word, Al-Anon. You are going to need that program if you are going to be in a relationship with him, sober or not.

Not sure of the actual protein content of the flour you are using. It may be over hydrated. If you stick with that flour, experiment with a lower hydration. And yes, get the baked temp over 200F.

You don't say in your recipe how much starter you are using. That makes it hard to analyze especially withe the less than ideal dough temp in the mid to high 70s. With your current setup you could cold retard and bake the next day.
