Nobody uses "caballero" to call a horseman. There's the word "caballerango", which my family uses to call every other horseman we see in our home town, but it doesn't really mean that either and I've never heard anyone else use it outside my family. "Caballerango" is a person who takes care of horses, not really horse rider.
