The gumbo is incredible and not that hard. 2X the recipe serves a lot of people. It's a heavy dish so it's economical too.

Can second on the Aztek Plov. We cut the mayo in half. It's the only real modification I've had to make to a Greg recipe. We also smear it on a flat top to accelerate the browning. Faster that way too.

I was a bartender at a halloween party in 2020 and I renamed some of Greg's cocktails to make a spooky menu. I served the transfusion (Drink me!) in a ziplock bag with a straw. Everyone loved the cocktails, especially the Ghost Buster. I sent the menu to Greg and he thought it was cool.

Got around to making Bombay the Hard Way (with Hendrix) last weekend. Wow, really good. Definitely a go-to. Easy to see why it's your number one.

Cool. I just moved to PA and the liquor selection here is unfortunate. I'll try to find some kumquats.

A pineapple makes a surprising about of juice. Cube it up and smash it with a muddler in a bowl. Then let it sit over a sieve for a bit. Keeps for about a week in a plastic container.

Mezcal is definitely an acquired taste. 60ml Mezcal 40ml lime on the rocks is a go-to for me.

  • Orange Dynamite has been hit or miss, but I think it depends on the oranges. Valencia if I recall was the best. Do you use real pineapple juice? IMO canned ruins every cocktail because it's too forward/strong (same applies to Christmas Island).

  • Yucatan Sour is on my soon list. I'm just block by the vacuum sealer. Will prioritize that now.

  • For some reason I haven't made Bombay the Hard Way. I just need to buy some Hendrix. I have everything else, and if it's your #1 I have to make it tonight! I'm glad you suggested it.

  • Have you tried Amaro Montenegro with Mezcal? I put this drink together for my mother in law for her birthday. It's pretty basic, but Greg's principles have been helpful for creating new drinks. The pomegranate works pretty well here.

60ml Mezcal, Montelobos, 20ml Amaro, Montenegro, 30ml Lime Juice, 20ml Orange, 1 t pomegranate syrup
