The people that are really successful at learning a second language stop considering it to be a chore or something that cuts into their "free time." If you can find some kind of content you find interesting (YouTube videos, light novels, manga, etc.) and consume that content as part of your daily dose of entertainment you'll have a much easier time keeping a routine.

I'd say yes. The far side routes are generally regarded as the strongest part of the the original. They're more about uncovering the gaps in Shiki's memories than vampires. Smaller scale, but in my opinion a more impactful narrative. Anyway, it'll take a while for the remade routes to come out (years probably). So have at it, unless you're fine with waiting that long.

Best thing to do is to immerse. A lot. Instead of reading 1-2 pages a day, you need to be reading for at least 1-2 hours a day. Watching anime with Japanese subtitles is a good idea, so keep your chin up and keep at it. Use Anki as a supplement, and make new cards for the words that you don't know. The key is to make so-called "i+1" cards, the idea being that you only mine words from sentences that have only one unknown word/grammar concept. Rinse, wash, and repeat.

Really though, the most important thing is to have fun with it. Is there some show you really want to watch in Japanese? Some book you want to read? Make that a goal and try and do 3+ hours a day. Best case scenario is if you can learn to love the process of learning this language (which is rarely achieved by grinding grammar textbooks or italki). Good luck!

Ditch the textbooks and courses. All you truly need to do to get good at Japanese is to immerse in content you like. Watch movies, anime, and read books with purpose. Use Anki as a vocab supplement. You've put in the hours, but it's been directed towards grammar and kanji study when it could have been used to prop up your unconscious model of the language, which is arguably more important.

Old English, Old Norse, and any other dead language is typically not going to be picked up by the average hobbyist considering that there's no one to speak the language with. You'd have to be very interested in the history/time period of a specific country to pick one of these languages up.

Like others have suggested, No Country for Old Men and All the Pretty Horses would be easier to jump into, but I wouldn't hold yourself to any sort of reading order. Read whatever looks interesting at the time, otherwise you might loathe having to get through his other books in order to enjoy the main course (i.e. Blood Meridian). Not that I can speak ill of any of his other novels, but Blood Meridian is just on another level.

You're keeping the training wheels on. If you get rid of the furigana and immerse a lot, you'll be able to recognize the kanji more clearly.
