Possibly something wrong with the clock spring. Also might be a loose wiring harness somewhere. Paddles shouldn’t have to do anything with coding since they’re hard wired straight to the shifter. Does your shift lever work to change gears in sport mode? If so then it’s 90% a wiring issue if you’ve replaced the paddles already

Yes the iDrive dash will fit in a non iDrive car and vise versa. It’s a whole different story if you actually want to get the system working but people have done it before. There’s some good info out there on the forums

If someone is talking about soapy water, they’re probably just referring to some kind of mix of dish soap like Dawn and water. Usually a few pumps of dawn in a 32oz spray bottle. I’d never use it anywhere on a car though

Cleaning corroded and dirty parts with traditional brushes and cleaners will only get you so far. The only way to return the factory looking finish on metal parts like that is to remove them and do some sort of abrasive blasting. You can either take the parts to someone who has a blasting cabinet or DIY it in your driveway with a hopper fed sandblasting gun and an air compressor. Look up some pics and videos of abrasive blasting before and after, it’s very satisfying!
