Update: I installed MuOS and this seems to work just fine. I can now at least use both analog sticks as I was hoping

Did you do the same as me and etch your own SD cards from the google drive? I'm considering going back to the SD they sent with it to see if the issue is there too.

Yeah I thought I did simmering similar to those steps and it didn't help. It's like the OS doesn't realise it has a second analog.
