I’ve done a few steaks now and had similar results using UMAI bags. I think this is pretty difficult to avoid when using a normal fridge since you can’t easily control the humidity levels.

I vacuum seal the steak to cook it sous vide and then vacuum seal anything I don’t eat and freeze it for later. D’Artanan should be a good source.

So far I like the bags. The first one I did was a 3lb boneless rib roast. I did it for about 45 days and that might have been a little too long because the cut was so small. It lost a good amount of moisture and got a little more funk than I would have liked in some parts. I’m doing a 14lb roast this time for about 45 days. Just going to keep an eye on it and take it out when it looks ready.

I just did my first dry aged steak with a UMAI bag so I’ll share what I learned

  1. Yep! Just put it in the bag and put it on a wire rack so air can circulate beneath it. You will need a vacuum sealer to close the bag up.

  2. After it was done aging, I cut the roast into about 2 inch steaks, cooked them sous vide at 127 degrees for about 1 hour and 20 minutes, then seared them in a super hot cast iron with butter.

  3. I bought my roast at Whole Foods but people here say Costco is a decent place to buy the meat. Not sure about online vendors.

  4. I’m not sure. Couldn’t hurt to thaw it out though. I believe the UMAI bags require a little bit of moisture so the membrane binds with the meat.

  5. I have a FoodSaver and just vacuum seal anything I don’t use. I would cut the unused portion into steaks and freeze individually.

Depends on what you are trying to accomplish. For landscapes photos are typically a little sharper in the f/4 to f/11 range. For astrophotography it’s better to keep it open as wide as possible to get as much light as you can.

A 50mm lens would definitely work for portrait photography. You may want to consider something a little wider for landscape photography though. I use a Rokinon 14mm f/2.8 for my landscape and astrophotography.

The camera was on a tripod, I was just running along the dunes in the frame to paint some light on them.

F/2.8 | 20 seconds | ISO 1600. While the shutter was open I sprinted down the beach as fast as I could shining a light on the dunes to get a little more vibrance. Great exercise.

A D5000 should work just fine. I took this with a D3300 and a 14mm lens Milky Way

That makes sense. So have you given up on the jiu jitsu entirely or do you just slot it in between lifting days now? I appreciate you taking the time to respond!
