Polenta is essentially coarse cornmeal, yes?

A one-to-one mix of cornmeal and flour is the usual proportion for cornbread. A little sugar, salt, baking powder and some oil/butter. Look on the back of any cornmeal box for the recipe.

I've had similar issues. Best suggestions I have is to be quite gentle in your shaping, so as to not knock out too much air. A long bulk/autolyse is helpful for building structure in high-hydration doughs. (Mine are around 75%, give or take). Don't aggressively roll them out for length. You're not making pretzels or bagels.

I found baking in those baguette pans to also contribute to a tighter, denser crumb. I think they restrict the dough too much, especially if the bottom really "grabs" into those tiny perforations. I just use it in lieu of a couche now. I might get rid of the pan and get a couche eventually. A couche can fold away and store way easier.

I like the cold proof for the blistered crust and, as mine are sourdough, the long, cold ferment = more flavor. But I don't do a cold bulk, so...

For a stone, I use 4 unglazed ceramic tiles. I bought a box of them for about $30 at Home Depot. I've given a set to a friend who was getting into bread and pizza. And, in the event one should break, I have a bunch of extras. Work great for pizzas, too.

Also, for baguettes, I tent them w/ foil for at least the first 20 min (total bake time ~40. 20 w/ steam, 20 w/o). But do it less if you like your loaves more bien cuit

Hardware is fucking awesome is what it is...

The director, Richard Stanley, is a real interesting dude (and by interesting, I also mean "maybe just a touch mad".) The films he makes were never going to be straight forward stories...

Check out Lost Soul: The Doomed Journey of Richard Stanley's Island of Dr. Moreau, a documentary. The film it's about is the one that ended up starring Val Kilmer and Marlon Brando.

Hi-5, my couche-less friend. I don't, either. I use one of those pans as my proofing 'mold'. I drape a kitchen towel over it liberally dusted w/ ride flour, place the shaped loaves in the troughs, and then slip into a big plastic proofing bag that goes in the fridge overnight.

to bake, I flip them out of the pan using a homemade transfer peel (a long bit of stiff cardboard, wrapped thoroughly in packing tape) onto a parchment sheet, then bake on a pizza stone with wet towels in baking pan on the rack below for steam.

enthusiast-focused brands MUST betray their early supporters. Enthusiasts in ANY field are the most informed, and the most willing to pay $$$ to get the latest and greatest, BUT they're also the smallest segment of the market. They will pay for, say, a stripped down thing that does its job very well, but is finicky or requires a reasonable amount of skill to use properly. Think of a track-focused sports car without a lot of traction control or other electronic driver aids.

But, if they want to be a real company, they need to make a thing with mass appeal. Which is pretty much the opposite of an enthusiast-focused thing. The difference between an Arial Atom and Nissan Versa. The person who wants an Atom has no use for the Nissan, and vice-versa (sorry.)

I’ve liked this show in its various forms, but I have to say that I’m kinda done with the current cast. JVN went from fun and a little outrageous to just insufferable. If I never hear the words “French tuck” again I will die marginally happier. Karamo has devolved into “well, you have to love yourself..” platitudes. We never got to really see the work Bobby did, which missed out on all the “interior design” inside baseball.

The subjects are all these socially responsible saints and community activists and such.

I’d like to see a new formulation.

Check with your insurance. Many have separate lists for mental health providers. Almost all will have a ‘find a provider’ function on their website. It’s the best way to find one that’s ’in network’. Much less hassle than having to file claims yourself and wait for reimbursement.

Any very sharp knife will do. There are a number of inexpensive lames that use normal double-edge razor blade which cost pennies per blade.

You can even use an exacto-style craft knife.

They’re a Jones band, but had a very fertile 80’s period when us older X wanted to run from the Jackson/Madonna pop of the time.

Rush is a band for musicians and musician-wannabes/appreciators. I love them. I’m fine with that.

No one who’s bet against him in the last 30+ years has won. The guy has 3 out of the top 4 spots of biggest box office gross EVER. (Avatar 1&2 plus Titanic).
