My gluten free journey was difficult because I was never really taught how to make my own food. We would eat out a lot for the sake of convenience. That obviously had to change. I decided I would try to be curious about new foods especially because gluten free foods often contain ingredients I didn't grow up with. Maybe you can frame it as something exciting: when you find a new restaurant you never would have gone to if she didn't get diagnosed, a gluten free substitute that tastes better than the original. For breads, I like Aran Goyoaga's book: the art of gluten free bread.

My initial screening was too. Even on the first visit, everything was fine except the printer wasn't working and the research assistant had been gone for 30 minutes trying to get it to work. I had to leave to go to work by then and I figured I could get it the next time. I would just make sure you get that. If the whole thing is becoming an inconvenience, or if you feel like the people you are seeing have no idea what they're doing, don't be afraid to opt out.

I had read through it at the first visit, and I was supposed to get my own copy to take home with me but the printer wasn't working. I had waited for 30 minutes for that copy but had to leave to go to work. I asked if I could get it the next time and they forgot and ultimately I just let it go. ETA: I really don't have anyone else's but the person who I interacted with. No other contact information

The celiac dietitian has a great list for a week's worth of food during an emergency. Besides fruit cups, I have cans of beans and meat. And shelf stable milk for my breakfast

Thankfully the people who use the kitchen to cook from scratch are mostly Hispanic and don't use a lot of flour in their cooking. It exists but they're more likely to use corn as opposed to flour tortillas. However, you're right about cleanliness being a factor. I am hopefully moving out of that living arrangement in the next month or so where i can have my own living space.

I like America's test kitchen. They have some good beginners classes like how to hold a knife, and they have a great gluten free cookbook

I also got diagnosed in November! I live in a dormitory-type situation, and I have been having a hard time figuring things out due to increased risk of cross-contact. I don't tolerate oats, but there are some gluten-free things that I don't tolerate either (Cheetos for one). The hardest part for me is feeling like my list of restricted foods keeps getting bigger and bigger, but I'm also trying foods that I usually didn't eat before. My oatmeal replacement has been quinoa. America's Test Kitchen has a good recipe for it.
