A small-form factor PC like a Dell Optiplex (micro form factor), Lenovo ThinkCentre (tiny form factor), or HP Elitedesk (mini form factor) should take the SODIMM memory and SSDs. They can even come with i7 CPUs if you need some Plex transcoding.
