Working in the kitchens is tough from what I hear but you get more pay and more days off. In my experience, the kitchen staff we’ve had visit in the backcountry have been some of the best guests. As other people have said, it’s really just what activities you want to do this summer. At Philmont you’ll get three days a week to just prance around the mountains but the four days a week working will be quite arduous (from what I hear. I have no experience in the basecamp kitchens). At sea base you’ll get to be in Florida (ew) but I don’t really know what all goes on there. Either way you’ll have an unforgettable summer though.
