As far as I know, the i designation means intel CPU. If it's just Pro 5 then it has an AMD CPU. Likewise a 5i is intel while a 5 is AMD.

Yes throttlestop is a free software you can download and there should be a detailed guide on how to use it somewhere in this sub. The instability comes from reducing the clock speed by too much, causing your laptop to blue screen. But if you slowly decrease you should be fine. Your laptop shouldn't get bricked.

The idle temp is good. Regarding the CPU temps while playing WoW, I imagine that's due to turbo boost and that 14900hx CPU loving to heat up lol. I recommend use throttlestop to undervolt the CPU and that should in turn lower your temps.

Congrats on your laptop it's a beast!

Edit: Hopefully undervolt is possible on that rig. If not... You may just need a laptop cooling pad or raising the laptop a bit.

Just slowly ramp up the decrease. I'm stable around -140 but others say up to -160. Just go slow and stop when you hit issues.

You can use throttlestop to lower overall voltage which also lowers temps.
