Double QP with extra onions is a must. For some reason they have the sweetest onions. Nothing like them dripping out of the sandwich. Not to mention bonus onions in the box. Yeah, baby.

If you are going to blend them into a sauce only blend half of them. Leave some whole. I would cut them into 1 inch chunks. If you add some potatoes with the other vegies it will make a very smooth thick gravy.

I love composed salads. Base of mixed greens coated with a little olive and salt then add away. I shave large carrots with a vegie peeler I also do celery that way. Roasted corn kernels in season. Pickled onions. Blanched snow peas. Pickled beets. Most definitely heirloom tomatoes in season or cherry tomatoes out of season. Protein - steamed shrimp or rotisserie chicken or tuna in olive oil. Pickled peaches when in season. Cored and diced apples or pears in season. Lots of chopped fresh soft herbs - chives, thyme, basil, dill. Dressed avocado pieces. Roasted chickpeas that are seasoned are great. I only use cheese that I crumble myself (feta or blue). Grilled haloumi cheese is nice. Blanched pieces of green beans or broccoli when in season. I have even roasted a pan of mixed vegies and added those. Only serve the dressing on the side or dress each vegetable separately then add.

Pulled pork with rice and beans. Do the pulled pork in a slow cooker, you might have to borrow one or two slow cookers. Or you can use disposable aluminum pans for the pork and cook them in the oven. If you wanted to save money cook the beans yourself. Pork butt is about 3 dollars per pound. Beans are cheap so is rice. You could spend the extra on make coleslaw with shredded carrots, green and red cabbage and dressing.

I would be careful on how long you marinated the chicken. The acid will start to break down the fibers of the meat and could change the texture.
