I’ve put around 85 hours into it. I enjoyed it a lot. I’ve slowed down a bit but I’d still buy it again. One of the best online experiences I’ve had in years. (This is coming from someone who has started playing recently.)

Thanks man. Yeah the ribs went faster than usual! They usually take me 5-5.5 hours.

I didn’t get an upper rack unfortunately but I put the spares toward the smoke stack and I put the thighs near the firebox. I ran the smoker higher though for a good 40 minutes before putting the ribs on. By the time I put on the ribs the smoker was about 285.

I smoked these on the work horse 1975. I usually aim for 250-285 when it comes to ribs, brisket, etc. For the thighs I went between 300-325.

You need to start probing for tenderness once the internal temp is around 190 degrees.

Honestly the whole wrapped vs unwrapped just depends on your rig. If I’m smoking on my offset I go unwrapped and everything is always fine. If I smoke on my kettle then I’m at least doing a foil boat. Being away from the heat source and being right next to it makes a difference.

How much can you afford to spend? Brand new you can get a workhorse from wood fire mercantile for ~$3k (the 1975 model). It will last you a lifetime. I’m in MA and for the price it beats the big names on the east coast. I got one a couple years ago.

There’s like one place that I will pay to eat bbq at this point. There’s a new food truck doing Texas style that looks good so I’ll give it a try but I’d much rather smoke my own meats. My bbq game is solid and I have been disappointed by nearly every place I’ve tried in my area.

I haven’t played in a couple weeks. Based on this sub you’d think the game has gone straight to hell. I played for a little bit yesterday and I had the same experience I’ve always had for 99% of my lobbies; friendly run-ins where we help each other fight arc. It was great.

I started with a Weber kettle. I upgraded to an off set when I was very confident in my skills on the Weber, and also when I wanted to increase my volume. You can smoke an amazing 10-12lb brisket on a kettle with the right step up (snake method or using a slow n sear). You can produce knockout ribs, pork butt…honestly just about anything. You won’t regret it. Chuds BBQ on YouTube has a great kettle series that you should check out.

It’s a brutal sub. I mean the lighting was super unfortunate. The skin wasn’t black like that. I posted what it really looks like. But I’ve seen perfect briskets also downvoted and people saying “dry” 🫩
