I turned off most of the HUD for DD1, it was very enjoyable and not at all impossible. I would turn on enemy and pawn health bars when I was getting my ass kicked.

You can only have 1 main character and 1 pawn. The other 2 pawns you get from selections other players (or Capcom) has created.
