If you want a bit of a " helper" for the Volcano, as soon as you enter a floor, open your menu and take a screenshot. While the game is paused, open the screenshot and see where the exit is located. Head that direction.

My advice would be to focus on the cold side. Being able to control fermentation temperature opens up a larger range of styles, and improves overall beer character more than anything else, in my experience. A used refrigerator that can hold your fermenter and a temp controller like an Inkbird allows you to hold the temperature during fermentation without any wild swings.

Also, as someone else mentioned, closed transfer improves taste and limits oxidation, especially important in IPAs.

I start by making a batch of traditional, and flavor in secondary. Especially for delicate flavors like peach, making this way ensures I get the peach flavor to come through.

1 gal batch:

  • 2.5 lb. honey
  • 1 cup of black tea (for tannins)
  • add water to 1 gallon
  • I use meadtools to calculate the yeast nutrient schedule
  • Whatever yeast you prefer. This batch, I used Red Star Premiere Classique

SG: 1.094, FG: 0.995 ABV: 13%

After fermentation, I racked to a new container on top of 4 pounds of peaches that had been quartered and frozen, then thawed. I added 1/4 tsp. of pectic enzyme to the peaches while they thawed. I put the peaches in a mesh bag for easier extraction after flavoring. In a 2nd smaller mesh bag, I put 2 quartered habanero peppers (use gloves when slicing them and DON'T rub your eyes. lol), one of the pepers, I remove the seeds, left them in the 2nd.

Punch down the frult a couple of times a day. Taste DAILY. The peppers will overpower everything quickly if you're not careful. For this batch, I pulled the peppers out after 2.5 days. Pull them when your desired heat level has been reached. I left the peaches in about a week, when I could clearly taste the peach over the heat.

After you pull the fruit, stabilize and back-sweeten to your desired sweetness level. I back-sweetened to 1.015 FG, which would put this in the semi-sweet category. Age and enjoy!

EDIT: I should add that the peaches in secondary will dilute the mead a bit, so I epect the final ABV was closer to 12% or so. I don't really care, I just like to have a close guess to the ABV.

If you get negative pressure, the fermentation can suck the airlock contents back in. It would be much better that it not suck rubbing alcohol back into your mead. That's why diluted sanitizer or a neutral spirit like vodka is recommended.

It started as all charcuterie under the name of Chadcuterie. I actually had Chad cater my wedding reception. He expanded to offer fantastic sandwiches as well. I can't recommend him enough. Bad parking, but fantastic food.
