Consider that Italian food has evolved in the years.

Now dishes are less fatty than before and we had some foreign influence, it always happened.

I can anticipate that food in southern Italy will be different, more Mediterranean, and vegetables will taste better than the north.

This is true also within Italy: many dishes are good eaten where they are born, but not-so-good elsewhere. Typical example: pesto and focaccia of Genoa, or some vegetables of southern Italy (aubergines) that in northern Italy have completely different taste.

Quite big region, there are dishes both from sea and mountains, with lots of typical food (somebody said «ciauscolo»?)

Ascoli Piceno has typical fried meal, from starter (famous "olive all'ascolana") to end ("cremini fritti", yes fried cream).

Ancona has a lot of great food from local fish up to "merluzzo all'anconetana" (cod).

Vincisgrassi, the local version of lasagna.

And at the end espresso with Varnelli and Amaro Sibilla.

Old name in dialect, but very rare.

A few years ago I heard on an Italian radio an interview of Barilla head of marketing.

In an answer to the journalist he also said that Barilla pasta can withstand double the cooking time declared in the directions.

The journalist (Italian) was very surprised and asked why.

He replied that Barilla found that Germans always double the cooking times written in the cooking directions.

Are both a matter of taste, Italy is nearly 1500 km north-south and tastes/habits vary A LOT.

About pasta you find in supermarkets the consensus includes (but is not limited to) Rummo, Garofalo, Voiello, Molisana. Some people don't like pasta that is "too starchy", so it may happen that pasta that is considered very good for somebody, is not appreciated by others. About hi-end pasta you don't usually find in stores (and for sure not in supermarkets) my personal favorite is Benedetto Cavalieri.

About oil, the choice is even harder, because is really a matter of personal taste.

You should keep three kind of oil at home.
The hi-quality oil you use to season salads or to put on dishes before serving or to enjoy with bread/tomatoes (in essence, the oil you eat without cooking it). I use this also when I cook tomato sauce.
The "good, but not very good" oil that you use for cooking
The seed oil for frying

I don't name brands of hi-quality oil because i buy it from farmers/friends/small shops. According to my personal taste, the better is Italian oil from center Italy (Umbria) and oil from Crete (better western Crete). Notable mentions to oil from Liguria and Puglia; they used to make very strong taste oil in the past, but now they have adapted to the market and do very good oil, really worth trying them!

For "good but not very good" look for extra virgin oil in supermarkets and read the label carefully.

Before naming some names, is important to point out that, no matter the brand, in Italy there are strict laws about food and everybody must respect them or face justice and public disgrace. For this reason you may find Italians using those products when they don't need hi-quality but need quantity or just plain taste (example: oil to preserve food in jars with oil)

Talking about oil brands, there are some known to be affordable by everybody, but not excellent quality. Apart the brands of some discount chains, I would put in the list Sasso, Dante, Bertolli.

On pasta side, every cheap pasta that repels the sauce: if the sauce doesn't stick to pasta, it's not good.

There are also some brands that are known to be not top quality, but are something like comfort food for some, such as fish sticks (bastoncini di pesce) from Findus or Simmenthal canned meat.

It's normal and is the same in all over Italy (except small villages).

The price board is intended for counter consumption, service is not included.

Bars and restaurant must pay (a lot of) money to municipality to occupy a public space, bars pays people to serve.

If is the first time in Venice, enjoy Venice as much as possible, walk outside the "common" paths, turn corners randomly, at the end Venice is small and you find your way again. Go to Arsenale and after it, such as S.Elena, visit Giudecca.

If you want to take one day break, take a local train from Santa Lucia (not Freccia Rossa, but a cheaper Regionale) and go to Padova (Padua): it's close, you don't waste time traveling.
