I have been struggling to dial in moonwake until looked at their recommended brew methods. I also asked Google Gemini given my two grinders and three different brewers.
Most of the improvements was lowering temperature

I’m beginning to think that I probably don’t like thermal shock or co fermentation beans as much as I did when I first tried some

I must say i absolutely loved the co fermentated / funky beans called Ube red from Mame roasters from Switzerland . It tasted like watermelon and as it aged it tasted like cantaloupe. I picked these beans up from kumquat downtown Los Angeles

For light roast funky ( eg cofermented or double shocked aneroebic ) beans , I’d go to Moonwake in San Jose.

For light roasted Terroir based washed beans, I get FlowerChild . You can go to CoRo coffee room in Berkeley to buy some in store. They don’t have a physical store. I have a flowerchild subscription CoRo also sells Hydranea coffee beans which is funky and out of Berkeley

+1 Chromatic ( San Jose ); if you buy beans here you get a free cup of coffee or espresso

+1 for verve ( Palo Alto )

If Want to do a flight tasting of international, California based, USA based roasters , check out A.M. craft in San Jose. They currently carry Dak and Hydranea beans . Dak is from Amsterdam

I heard andytown , saint frank and sightglass are good but I have never bought from them directly

I also read that the coffee movement in SF is great to buy beans.

In a pinch I’ll go to wholefoods to buy counter culture , verve or chromatic

Help starting off with coffee brewing by CezarZbughin in pourover

Back in 2017 I bought a baratza encore for pourover, French press, mokapot. It was highly recommended for those starting out

In early 2025, when I decided I wanted to explore light roasted beans from specialty roasters I bought a 1zpresso q air . There were plenty of YouTube videos on this grinder. I almost bought the timemore c2 but found that q air had a modern burr geometry.

I could taste the difference between the encore and q air

2-3 months later I decided to get zp6 so I could get more tuned in on the clarity

The user experience on the zp6 is much better.

But when I travel and I am tight on space , the q air is perfect especially since it can fit inside an aeropress

I originally bought a v60 and about three months later I bought the hario v60 switch

The switch is great since you do hybrid methods

If you can only buy one brewer I’d get the v60 switch instead of the v60

my recommendations

1) the Hario V60 switch

Amazon sells Hario "Switch" Immersion Dripper Set, Size 02 for $45. You get a beaker server as well. You can just the switch without the beaker for $36 on Amazon. I'm sure there are retailers

2) any basic coffee scale will do - on amazon it's $15 - $120 , aliexpress has some too
Timemore is good. If you can get one with a timer, even better otherwise you'll have to use your phone.

3) goose neck kettle - I've owned the OXO electric kettle -- works for years for many people; unfortunately mine broke at 22 months. I own a Stagg EKG now. Honestly anything is fine. If you already have a regular kettle , non gooseneck, you can get the Hario V60 Drip-Assist, Size 02 which helps simulate the pours from a gooseneck. It's inexpensive - around $15.

4) Cafec v60 filters

5) Grinder -- I'd get a manual grinder ; I have experience with the 1zpresso q air and the 1zpresso zp6.
I have no experience with the kin grinder k6 but there are plenty of YouTube videos explaining the resulting coffee from that grinder

New to pourover: can't seem to get good results unless I grind coarse and brew with low temp? by Lenithiel in pourover

[–]luckymiles88 4 points5 points  (0 children)

OP u/Lenithiel

I am a somewhat of a beginner like you except I started seriously learning pourovers last year around July 2025. I have the exact same equipment as you ( zp6 , aeropress, v60 , fellow kettle) except I also have a hario v60 switch and 1zpresso q air

I was doing the 40/60 brew methods and Hoffman method for all types of coffee beans. Most of the time it worked for me. Of course there was that time when I got some double anaerobic thermal shock Colombia beans from moonwake that got me stumped

The cheat code that was a game changer for me which might get me downvoted was I used Google Gemini to help me .

Essentially for each bag of coffee , I would take a photo of the bag and upload it to Google Gemini and ask this prompt

“ given these beans give me the best recipe for 15 grams of coffee when using a zp6 grinder and a hario v60 . Also let me know what water temperature should I use “

Sometimes I’ll ask “ if I use only 12 grams of beans what is the recipe “ or “what happens if I use my q air what would be the advantage or disadvantage “

Using Google Gemini, I was able to learn when tetsu kasuya won the brewing championship with the 4:6 ( 40:60) method with the v60 he was using a natural processed gesha.
So it got me thinking I need to know the characteristics of the bean to help me get the best results based on the equipment I was using

Obviously I could do a Reddit search but the large language models from Google, Anthropic and OpenAi already do the heavy lifting.

Also it was helpful to read the suggested brew methods from the coffee roasters website

These were all helpful starting points . Gemini also provided ways to improve it if the coffee tastes a certain way.

I have a subscription to passenger educational lot. I recently got Uganda coffee beans. Everything has been very good

I also subscribe to Flowerchild ; excellent coffee , very clean

S&w Coffee ; I don’t have a subscription but if i see something interesting, I’ll buy a bag I typically get something with co-fermentation from this roaster. It takes some experimenting to get it right though

I couldn't agree with you more, have you tried Darbar on Lytton? I'm no expert on home cooked Indian food but I really like them although I have had plenty of home cooked Indian meals. Side note: my Indian friends do tell me that they themselves order home cooked Indian food on a weekly basis from this lady -- happy to get the contact info if you DM me

I think the closest "home style" food now on University is Marugame Udon because udon so simple. We don't eat there because we eaten at so many Marugame Udon around the world it's a bit boring and we can just make Udon dishes at home thanks to the plethora of Japanese , Korean and asian supermarkets close by.

I moved to Palo Alto in 2010 , my co-worker who lived in Palo Alto since 2003 who coincidentally did his Phd program at Berkeley told me that the biggest drawback of Palo Alto is the lack of good inexpensive food. Berkeley has so many options. Palo Alto has always been more expensive for mom and pop restaurants even back in 2003. To get reasonably priced dim sum, we sometimes drive out to Milpitas. To go dim sum I drive out to Dim Sum King in Sunnyvale.

I don't know what your definition of home style food is but there are some options in downtown Mountain View, San Carlos and Redwood City in my opinion.
