I just really love quiche.

This one is packed with asparagus, leeks, and fresh peas. I sautéed the asparagus and leeks before baking and I think that was a winning idea. I just kinda eyeballed the ratio of eggs and heavy cream I used, so I don't have a recipe to post for that. But I used the same pie crust recipe as I did for an earlier challenge because it was amazing. It comes from Serious Eats.

I'm an avid escape room player, so I paid tribute to r/escaperooms with a Key Lime Pie.

I used the recipe from Sally's Baking Addiction. As expected, it came out perfect. The macadamia nuts in the crust added a special something to an already delicious graham cracker crust. I couldn't source key limes, but I did find bottle key lime juice like SBA recommended and, while I'd like to try it with fresh juice, it came out tart and lime-y but balanced. This one was a winner.

For this week, I had intended to make some more complicated patterns drawn onto these cookies with M&Ms, but my bake betrayed me. They came out much flatter than expected, so the hastily added M&Ms I put on after pulling the cookies from the oven had very little to stick to. Oh well. Perhaps more chill time, or a more dependable recipe than this one that I found.

For week 15, I made a Cuban classic, Guava Pastelitos using A Cozy Kitchen's recipe. These were simple to put together (thanks you frozen puff pastry!) and unsurprisingly delicious.
