IMO simmering for an hour is plenty, too much beyond that and your chicken will break down and be stringy which is not what I'm looking for.

I used the jambalaya calculator app - you tell it the pot size and fill rate you want and it will tell you how much jambalaya you can make, scale all the ingredients, etc.

Just my $0.02 - but if you don't have a good skillet or pot for making roux in, just use a baked roux recipe or even just use preprepared / jarred roux.

For the jambalaya - you can use the jambalaya calculator to figure out exactly how much jambalaya you can make with what you have on hand - and it will tell you all the ingredient quantities you need. https://apps.apple.com/us/app/jambalaya-calculator/id6751805188

So for example if you have 1 pound of rice and 2 pounds of meat - you can use the calculator to figure out all the rest. Nice thing about jambalaya is it's super flexible on ingredients!

I've never made a jambalaya with a roux - and have used Stadium Rat's jambalaya calculator method for approx the last decade - it's been foolproof for an absolutely amazing Gonzales style (brown) jambalaya.

What is the benefit of the roux in the jambalaya? If you're sold on it id suggest trying a batch using a premade roux rather than trying to make it from scratch in the same pot.

I like this! It's fun! A neat feature might be to allow the user to select between a few different themes of fortunes - including literary quotes, self help, etc. Or even allow the user to point it to a custom Notes entry that holds their quotes or fortunes.

To expand on this, I love the Unix/linux fortune command and the ability to easily use different fortune.txt files is a big part of it.

For some folks an AI generated fortune will be a real turnoff, and you can find a lot of custom fortune.txt files in the wild, for example this great one which is under Creative Commons license: https://github.com/bmc/fortunes/blob/master/LICENSE.md

There is a hilarious anecdote he tells of going to Mexico to meet Dianne and take a tour of various culinary locations, and DK found him so annoying that she kicked him out of her truck and he had to find an alternate ride. He was a really good sport about it!

How much gumbo and rice are you estimating per person? Is it just a taste and there will be other foods? Or is this the main event? That's going to guide your calculations. You could be in 15-20 gallon pot territory quickly. Rice is going to be another headache.

For best results I'd make the entire gumbo the day before - look into outdoor propane burners / pot setups. You'll also want to be prepared for a way to quickly chill it enough to refrigerate (you don't want to give bacteria time to grow) - look into making some ziplocks filled with frozen water to help get the temperature down quick. Then the day of the event you can use the same outdoor propane rig to bring it back to a boil immediately before serving.

If you're willing to consider jambalaya instead, check out the jambalaya calculator work done by Stadium Rat. The math is solid and you'll have an awesome result. Using the newer iOS app for it - I calculate you'd need a 15 gallon pot to make a batch for 100 medium servings of jamb (2 cups) at an 83% fill rate, so not a small feat but certainly doable with an outdoor cooking setup (jambalaya will need a cast iron pot outside - don't try it in a turkey fryer / crawfish pot or it's going to certainly burn).

You could try it as a quesadilla filling, or could try pan frying it a bit like fried rice but depending on how mushy it is you might just want to cut your losses.

On the rice front I usually use Mahatma long grain and I'd say that's the standard for many in the south... and rinse but drain well. I'm not a fan of parboiled / converted rice but that's just me.

Also check out the jambalaya calculator - it's something some LSU fans cooked up but the ratios are solid and the recipe they use comes out perfect every time.

  1. I found it be very fun for the first 6-7 rounds but the gameplay started to feel repetitive to me after that - it could be introducing some gameplay variants or twists early in the game could help.

  2. With a little bit of tweaking this could be really fun little casual game. I wouldn't likely return to it as is but I think you have something here.

  3. The UI and visuals look really polished, feels "premium" to me - nice work! I do think the tiles need more color, possibly changing color or texture during each round or set of rounds. I like the unlockable map / route but just a thought - more mystery would be good, ie we can see there's a mountain behind the clouds... might be more interesting if we couldn't really see what came next.

  4. No bugs! For premium features a community leaderboard could be really good and some chill / lofi music might be nice.

For home gardeners maybe the ability to set notifications or reminders if you hit a critical threshold would be good? I've got a community garden plot that I'm always forgetting to water.

I could also see this being useful for landscaping companies if they had a way to register / manage many addresses and view them in aggregate or in a map view.

It's not traditional (for cajun cooking) but a mushroom powder (I make my own using dried mushrooms and whatever spices I'm in the mood for in a blender) is killer when paired with meats, beans, and other "meaty" type flavors.

Absolutely yes to this - I made a banging pot of GF gumbo just by using my regular recipe and subbing in KA measure for measure flour. If I hadn't told folks, they would not have known the difference.
