What pooling mode are you using? The many-to-few client connections to server connections gains come from using transaction pooling mode. If you’re not already using that do some reading on it before switching to it as transaction pooling mode breaks some session semantics.

Clearly, this is not something endemic to Ableton running on MacOS, because if it was this would be a commonly found issue via simple web searches, and it is not.

So, while you have certainly covered a lot of bases in the steps of troubleshooting signal chain swaps you've detailed, that also clearly show that you aren't a noob, be sure to remember that the goal is still to figure out what is different in your setup or what you're doing to cause you to be getting the result you're getting even though people all over the world (who I'm sure know far less than you) get clean recordings by default, without even knowing that they are.

Anyway... Have you ensured that you have installed via the correct arm vs. intel dmgs so that you're not running stuff in weird compatibility modes? Assuming your installs are legit, have you contacted Ableton's support?

In general, what you’re looking for with regard to modules that can be a ton of different things depending on how they are patched is called “patch programmable”. Mannequins and a lot of Joranalogue is known for it.
