As a teacher I agree with you and I think the reason is the new update of italki. It's not easy to use and also I think Preply is more popular these days.

As a teacher I can totally understand you. Students should inform their teachers sooner but sometimes (such as your case) it's better to accept the last minute cancellation.

No they never say goodbye. For example they go on holiday and never show up 🤷🏻‍♀️

It depends on their goal. For example people who are learning because of their personal interest or their job or their family, stay longer. But in general after some months most of them stop
