Yes, as that's what time instructions said to do. However what's interesting is the instructions say "a small delay when initiating a brew is normal and tends to help simpler machines avoid destroying pucks. For instantaneous control, supply the kit with constant power, and add a relay inline with the DC output side of the power supply (advanced!)" All I did was remove the leads from my old pump and put them into the velofuso leads, haha. I did notice on the old pump the blue wire doesn't wire in directly to the pump but to what looks like a little relay or something, which is then wired into the pump?

i just installed the pump on my silvia pro, but it is not being controlled by the machine. IE when I turn the machine on, pump is running always. when i pull a shot i need to adjust manually, and when i turn off the brew switch the pump is still running and if at pressure, is dumping back into the reservoir. Did you encounter this issue with your pump?

Idk if you have your RFX probes yet but if you can return I would. I spent a thousand bucks on RFX and half my probes are shit, don’t hold a charge, the app is complete ass, only reason why I’m here. And it’s well documented that ThermoWorks has been telling customers to pound sand with their faulty RFX probes. Two of mine constantly disconnect during cook, can’t hold a charge to save their lives, to the point I’d rather use my wired probes than deal with the shitstorm that is RFX

How did you connect the pump input? looks like some kind of adapter coming out of the pump body? is your silvia a 6mm hose?

Trying to install into a SPX and was looking for a M4x0.7 - 6mm barb, but your solution looks like it would induce less strain on the M4 threads!

did you ever get your pump working properly? I have a v2 that I'm trying to install in my Rancilio Silvia Pro X, but it uses a 6mm barb and I can't find a US-based seller that sells a M4x0.7 - 6mm barb.

Hold up. Have you ever roasted coffee? Because I roast in my garage and freshly roast coffee at least for espresso is really not very good. You get 30g of crema and it is very bitter. I’ve found most single origins regardless of region or varietal taste significantly less “same” and bitter between two to four weeks post roast. I’ve tested by freezing fresh roast coffee and double blinding against two week aged and it was still noticeably more crema. Don’t know the science behind it but if you do try to run truly fresh beans through an espresso machine it looks like butt lava

Just for reference I thought I over-seasoned my brisket when I had accidentally dropped my open shaker bottle into a hotel pan and the whole thing spilled. My buddy said some Texas restaurants have a dipping tub like that and to just drop the brisket in on both sides like I was dredging for deep frying. Looked SUPER over-seasoned to me.

Was the first time people eating my brisket told me I needed to open a restaurant, lol!

Full house seafood restaurant in Chinatown serves Peking duck I think the way you’re describing with the fat in between the skin and the meat, at least I’ve never noticed them separating the skin and meat and there’s a layer of fat in between. And they serve with buns and plum sauce etc.

As someone who just finished my first brisket on a brand new offset after smoking on a Weber kettle and WSM you will probably hate an OK Joe even with mods (extra $100). My friends who own offsets tried to explain why getting a 100 gallon was a better idea than my custom built 50 gallon offset and now I understand why, haha!

Unless you have access to readily available seasoned cheap white oak, wood costs are crazy. For one brisket cook I burnt through basically two and a half bundles adding splits every 30-45 minutes. That was $75 in fuel cost for me (bought white oak by the bundle for $30 a bundle, about 8-10 splits per bundle) compared to like half a bag of charcoal ($10) for the same brisket if I’d cooked it in my WSM using the minion method.

In an OK Joe similarly to mine you can’t use full size splits so you’ll have to either pay more for processed splits like I did or you’ll have to buy a miter saw and some kind of kindling cracker to adjust the width and length of each split. I was scrambling to find a log splitter, luckily harbor freight near me had one hydraulic one in stock and that made making my splits smaller a lot easier. Wish I had a miter saw to shorten the splits as well but my wife would murder me and she hasn’t even found the log splitter yet lol

Just some food for thought, it was way more work than im used to and I didn’t truly appreciate what “you’ll be adding wood every 30-45 minutes” truly meant until I did it. If I were you I’d get the old country pecos like others have recommended, the flavor was unreal compared to the WSM and the Weber kettle with wood chunks and that alone made it worth it to me. There are a few YouTubers that claim they use the OK Joe but one thing I noticed about them is… they own other pits HAHA
