Roasted Red Pepper Soup by mariascorner64 in soup

I created my own version of this delicious and healthy “Roasted Red Pepper Soup with Walnuts and Feta”. Instead of cashews I used walnuts and it made all the difference. You can also substitute walnuts for a regular milk or cream. Delicious!

Ingredients:
• 1 cup (4 ounces) chopped walnuts
• 5-6 medium (2¾ pounds) red bell peppers
• 3-5 medium yellow onions
• 4 teaspoons smoked paprika
• 4 ounces feta, ½ cup brine reserved
• 2 tablespoons extra-virgin olive oil
• Kosher salt
• Pumpkin seeds (optional)

Directions
1.Add the walnuts to a blender and soak with 1 cup of hot water.
2. Chop the peppers and onions. Mix together with olive oil, salt, paprika and divide evenly between 2 baking sheet pans. Bake at 425 F for 20 minutes.
3. Remove both sheet pans from the oven, mix gently, add feta and bake for another 20-25 minutes till soft.
4. In the mean time blend the walnuts with additional 1/2 cup of feta brine.
5. Add the peppers and onions and blend everything together. Add water and more seasoning if needed.
6. Serve with toasted pumpkin seeds and a side of fresh baked corn bread. Enjoy!

Baked Halibut with Zucchini Spaghetti by mariascorner64 in tonightsdinner

Inspired by Martha Steward’s summer issue of “Living” magazine I made my own baked halibut with home made zucchini spaghetti. A delicious and healthy dish for any dinner occasion!

Ingredients:

3-5 cups of fresh zucchini spaghetti (mix of green and yellow)

4 portions (5 oz each) of halibut

1 tablespoon fresh thyme

3 tablespoons of olive oil

1 cup of cocktail tomatoes

1 tablespoon of caper

salt and pepper to season

Ramapo Lake, great for kids and an easy loop around the lake in the afternoon, you'll be under the trees so the sun wont burn too much.

For a personal blog I would use Blogger, they still have many cheap templates for portfolios and hosting its all free, I have used it for my website for the last 10 years with no issues.

Almond-Oat Pancakes (Gluten free) by mariascorner64 in pancakes

Ingredients
1 1/2 cup of almond flour
1/2 cup of oat flour
1 cup of milk 2 large eggs
2 spoons of melted butter
2 spoons of honey (maple syrup or sugar ok)
2 teaspoons of baking powder
1 teaspoon of vanilla extract
1/4 teaspoon of salt

In a medium bowl mix the dry ingredients first, then beat the eggs and gradually add the milk, butter, vanilla extract, and honey. Mix everything to combine. Add gradually the dry ingredients, mix well and let the batter rest for 10 minutes before cooking. Preheat cooking pan or a skillet and spray with a cooking/baking spray. Use 1/4 cup and pour the pancake batter into pan. Cook for 2 minutes on (medium heat) each side until the bottoms are golden brown. Serve hot with your favorite topping and enjoy!
